Japan's First Malt Whisky Distillery


Shinjiro Torii established Suntory as a wine merchant in 1899, but his ambition extended to creating a distinctly Japanese whisky. In 1923, he founded Yamazaki, Japan's first malt whisky distillery, in a humid valley southwest of Kyoto where the Katsura, Uji and Kizu rivers converge. The location was chosen for its pure mountain water and climatic conditions favourable to maturation.


Masataka Taketsuru, who had studied distilling in Scotland, served as the distillery's first master distiller. The partnership laid the foundation for Japanese whisky, though the two men would later pursue separate visions. Torii remained committed to developing a whisky suited to the Japanese palate—softer, more delicate and shaped by the country's distinct climate and sensibilities.


By 1929, Suntory released its first whisky. Fifty years later, Yamazaki's single malts began gaining recognition beyond Japan, establishing the distillery as a benchmark for quality and precision.


Two Distilleries, Distinct Characters


Yamazaki and Hakushu represent contrasting expressions of Japanese whisky. Yamazaki, positioned in a warm, humid basin, produces malt whisky with richness, depth and a pronounced influence from wood maturation. The distillery employs a variety of still shapes and sizes, fermentation lengths and distillation cuts, allowing blenders to work with an exceptionally diverse palette of spirit styles from a single location.


Hakushu was established in 1973 amid the forests of the Southern Japanese Alps at an elevation of approximately 700 metres.
